Pork Chops on a Griddle, with Spicy Sweet Potatoes and Roasted Marshmallows

 Ingredients

  • (4) 8 oz. pork chops
  • ½ Cup pineapple juice
  • 1 Shot of rum
  • 1 Tbsp poultry seasoning
  • 4 Sweet potatoes (thick sliced)
  • Canola oil (or olive oil)
  • 1 Tbsp crushed red chili flakes
  • Salt and pepper
  • 8 Large marshmallows

Directions

For Sweet Potatoes: Set your Coleman griddle to Low-Medium heat.

For Pork Chops: Set your Coleman griddle to Medium High heat.

  1. Marinate pork in pineapple and rum for 1 hour, season with salt and pepper, poultry seasoning. 
  2. Griddle to your desired temperature (minimum of 145 ºF)
  3. Toss potatoes in canola oil, chili flakes, salt and pepper and griddle until soft. (Approximately 10-15 minutes.)
  4. Roast  marshmallows using a City Bonfires Original Portable Fire Pit
  5. Place chops on a platter, surrounded with spiced sweet potatoes,
    top potatoes with the roasted marshmallows.
  6. The chops will make their own natural juices, ENJOY
